With all the hype Easter gets the day after is over looked by many. But let us not forget that Monday is Dyngus Day. Before moving back to Maine I lived for a brief stint in Buffalo, New York where the worlds largest Dyngus Day celebration takes place. What could be more fun then a holiday that involves whipping people with pussy willows?

Such a quick and yummy dinner: grilled asparagus and portobello burgers. The mushrooms were marinated in olive oil, garlic, onion and balsamic vinegar to give them a little extra kick. I forgot the buns when I went shopping, but bread from "Daily Bread" in Levant, Maine worked out just fine. For us, doughnuts and road trips go hand in hand! One of our favorites is Willow Bake Shoppe in Rockland, ME.
Though, Congdon's in Wells, ME serves up some pretty sweet sweets!
