The day after Easter

With all the hype Easter gets the day after is over looked by many. But let us not forget that Monday is Dyngus Day. Before moving back to Maine I lived for a brief stint in Buffalo, New York where the worlds largest Dyngus Day celebration takes place. What could be more fun then a holiday that involves whipping people with pussy willows?

Grilled Asparagus and Portobello Mushrooms




Such a quick and yummy dinner: grilled asparagus and portobello burgers. The mushrooms were marinated in olive oil, garlic, onion and balsamic vinegar to give them a little extra kick. I forgot the buns when I went shopping, but bread from "Daily Bread" in Levant, Maine worked out just fine. Grilled Veggies



Veggies marinated in olive oil, lemon juice, basil, salt and pepper, then cooked on the grill. Served over couscous with a green salad on the side. So yummy! My mouth was doing the happy dance!

Barbecue Tonight?
