With all the hype Easter gets the day after is over looked by many. But let us not forget that Monday is Dyngus Day. Before moving back to Maine I lived for a brief stint in Buffalo, New York where the worlds largest Dyngus Day celebration takes place. What could be more fun then a holiday that involves whipping people with pussy willows?

Grilled Asparagus and Portobello Mushrooms
Such a quick and yummy dinner: grilled asparagus and portobello burgers. The mushrooms were marinated in olive oil, garlic, onion and balsamic vinegar to give them a little extra kick. I forgot the buns when I went shopping, but bread from "Daily Bread" in Levant, Maine worked out just fine.
